3 cups warm water
1 1/2 tablespoons yeast
1 1/2 tablespoons kosher salt
6 1/2 cups flour
Mix all together in a large bowl until all ingredients are wet.
Let rise about 45 min
Sprinkle the top with a bit of flout and divide into quarters. Either wet your hands or flower them up well to form imo balls and place on a pre heated baking stone sprinkled with corn sand. a shallow pan with one cup of water on the bottom rack. Bake at 450 for about an hour
The dough can be put into the fridge for up to one week if you don't use all of it.
